The Orchard Speaks

Taste with your eyes first.

taste
First pour: chalk and wet stone.
A pause. Then quince paste
and something almost saline—
the memory of rain
on dry orchard grass.
Finish long as October.
sight
Close-up of a heritage apple skin showing visible lenticels, deep red and russet tones, dew still clinging to the surface

First fermented vintage

smell
Orchard rows at golden hour, grass wet underfoot, apple trees heavy with late-season fruit, warm amber light filtering through leaves
smell
Split the pear with your thumbs.
Skin giving way—
juice warm over your knuckles,
the smell so sharp
it makes your eyes water.
Hay bales. Ripe. Gone.
sight
Hand-blown glass filled with hazy amber cider, bubbles rising slowly through the liquid, warm light refracting through the glass

Heritage apple varieties

touch
Wooden cider press with fresh-pressed juice running amber through a cloth press, pomace piled at the edges, barn wood in the background
touch
Clay vessel, oak stave.
The yeast knows this cellar.
It has worked here before—
through frost and through thaw,
patient as the stone
under the orchard floor.
