First pour: chalk and wet stone. A pause. Then quince paste and something almost saline— the memory of rain on dry orchard grass. Finish long as October.

First fermented vintage
Split the pear with your thumbs. Skin giving way— juice warm over your knuckles, the smell so sharp it makes your eyes water. Hay bales. Ripe. Gone.

Heritage apple varieties
Clay vessel, oak stave. The yeast knows this cellar. It has worked here before— through frost and through thaw, patient as the stone under the orchard floor.

Still Cider
Chalk and wet stone, quince paste on the mid-palate. Long saline finish.
Pétillant Naturel
Wild strawberry and hay bale. Prickle of carbonation, tannin like biting a pip.
Traditional Perry
Rose water and pear skin. Delicate and long, with a finish of white pepper and chalk.
Heritage Blend
Cidre Normand energy — cream, baked apple, a whisper of funk from the native yeast.
Skin-Contact Rosé Cider
Dried hibiscus, ripe cherry, pomace. Tannic and alive. Drinks like a natural wine.
Wild-Ferment Perry
Honeysuckle and barnyard. Creamy bubble, finish of beeswax and green walnut.
